Eating raw vegetables in a salad is the perfect way to promote good health and help reduce the risk of illness. Watercress is a type of brassica vegetable used in Asian and European cooking. It contains high levels of photochemicals that help fight free radical damage in the body. It is high in iron, folate and vitamins A and C. Watercress is also rich in potassium, a mineral necessary for building muscle and keeping blood pressure at healthy levels. 

Recipes

green vegie salad

Super Salad 1

Mix together:

1 bunch of watercress
1 bunch of basil leaves
1 avocado diced
1 mango diced
A handful of snow peas and several florets of broccoli together in a bowl.
Add your favorite dressing to salad and toss to combine.

Super Salad 2

Combine:

1 bunch of watercress
Diced broccoli
Diced cauliflower.
Mix olive oil and lemon juice to taste drizzle over salad to coat.

Watercress Health Boost

Process together in a blender:

1 small beetroot
1 pear
1 stalk celery
1 knob of ginger
